Pumpkin-chicken tortilla soup

Feliz Otoño!





The weather has defiantly changed to the cooler side around here so it was time to bust our 
our fall/winter cookbooks and Crock-Pot. 




This recipe is quick and easy.
We did it before we ran out the door on Sunday morning and it was ready to eat that afternoon.




You will need:


2 large chicken breast cooked and shredded 
1 small yellow onion chopped
1 can of chopped tomatoes 
1 green bell pepper chopped
2 cups of pumpkin chopped into small cubes.
1 packet of Taco Seasoning
salt and pepper to season the chicken
1 can of diced green chiles
1 can of red beans
1 can of pinto beans
1 can of black beans
1 can of northern white beans
1 can of dark ref kidney beans
1 can of corn
1 32 oz chicken broth. we buy ours from Sprouts 

place all of these contents in your crock pot on low for about a few hours. 

Serve with Shredded cheese, sour cream and crushed tortilla chips.
